Grape varieties: 70 %Chardonnay, 30 % chenin Vinification : The grapes are picked by hand, pressed with the stems and pips removed after 24 hours. It is then put into oak casks from the Vosges and l’Allier (one third of the casks are new, one third used once only and one third used twice). Maturing in barrels lasts twelve months (regularly stirred for the first six months, matured on the lees, malolactic fermentation takes place in the barrels) then the wines are blended before being bottled. The wine is not fined or filtered.
Distribution channels: direct sale from the vineyard, wine merchants, restaurants. Tasting note: Colour is pale yellow with green tints, testifying to its youth and freshness. Open nose, lightly wooded, with notes of toast, vanilla, hawthorn and hazelnut. Taste: well-rounded, with good density; this is an elegant and fresh wine with a finish of liquorice, and menthol. This wine may be drunk as an aperitif, or with fish and white meat.
